Healthy You the Class...


HEALTHY YOU CLASS INFO

I need to have a committed count by the 22nd so I can get food,
make recipe books, handouts etc..

I am a Nurse - RN BSN ( I work at the U) and a Certified Foot Zonologist ( I zone peoples feet!)and so being I have a lot of medical background and General health knowledge. I changed my families diet 5 years ago and have seen fantastic affects!!! I tell you my tricks, tips etc.. how to do this with your family! I would have killed for classes like this when I was starting out! These are things that have taken me 5 years to figure out- and I am constantly still "figuring" things out! :) I do a lot of research and it seems I learn something new all the time.
I am teaching healthy cooking classes with a BIG emphasis on Nutrition. This in depth class is about General nutrition, acid/ base balance,vitamins and minerals -how your body absorbs them and what they do for us and the most bioavailable form, nutrient density, harmful additives etc... A long with all this information I MAKE you yummy Healthy Dishes to eat using the methods and knowledge I just taught you. So you don't feel so overwhelmed and know that healthy food can still taste great!!! You take home a LOT of handoutsand a Healthy You recipe book loaded with recipes so you can get started!

Oil & Herb Class

The Oil & Herb class is Sept 1 st.
This is such a fun class and tons of info. I go over the basics of oils & herbs- how to, what to, where to, why to etc.. I will give you tons of recipes with oils and herbs
( YES the Professors recipe- you can start with the next new moon) Also I will show you how to use them as cleaners, make your own laundry soap( take some home too!)
and a lot of other household items..
You also get to learn how to make your own Salve
( for lack of a better name)and take it home- it is awesome I use it on everything- cracked skin, cuticles, lips, healing scars, or those bothersome cracks on your feet. You will get lots of other beauty recipes too. With Holidays around the corner -they are also marvelous gifts!
It will be a lot of fun and as always lots of info, SAMPLES , and handouts!

REcipe Exchange...

Sending recipes out next week sometime, but for now go try this bread- 50 min START to FINISH!!! ( rising and cooking and everything- anyone can do it!)
No more excuses for not making your own bread!

Easy to Make Great Whole Wheat bread!
If I can make delicious moist bread anybody can- for some reason I am seriously yeast challenged- I have the hardest time getting things to rise- not sure why!!! BUT I can make this bread and it is delicious!!! Give it a try!
8 Cups hard red or white wheat (yields about 11 cups of flour- try subbing spelt or kamut too)
1/4 Cup ground flax seed ( I add about 1/2-3/4 cup)
1 Tbsp Sea Salt
3 Tbsp Yeast
5 1/2 Cups Hot Water
1/2 Cup Olive Oil
3/4 Cup Honey
Separate the ingredients. Mix the dry ingredients in a bowl and add to the wet ingredients in your mixing machine
With all ingredients added to your mixer, mix on level 2 for 8 min. It's a very wet looking dough so don't let that scare you. This is what makes it a very moist tasting bread!
After mixing the dough, Flour your hard surface and dump the dough out. A hard non porous surface is best. . Divide dough into fourths and scoop into your greased bread tins.
Let your pans sit for ten minutes before baking.
Bake on the CENTER rack for 25 min. @ 350 degrees

Here is a little info on why Wheat is much better then WHITE

This is what is LOST during the conversion of wheat to white ...

50% of all calcium, 70% of phophorus, 80 % iron, 98% magnesium, 75% manganese, 50% potassium and 65$ copper, 80% thiamin, 60% riboflavin, 75% niacin, 50% of pantothenic acid adn 50 % pyridoxine is lost. And to add on top of that White FLour is extremely MUCUs Forming- it goes in and clogs up your lymph system and organs and Bowels..

Wheat is stripped of everything GOOD and bleached with Chlorine Gas to make White FLour. The EPA identifies Chlorine Gas as a flour bleaching, aging, and oxidizing agent that is a powerful irritant, dangerous to inhale and lethal. This chlorine gas converts xanathine, a dough additive into a toxic substance called Alloxan. Alloxan is a byproduct of the flour bleaching process that result in the formation of alloxan in the flour.

WHo cares about Alloxan?- Well you should... When Genetic scientist want to study diabetes they give their rats ALLOXAN to GIVE THEM DIABETES- that is common knowledge alloxan gives you diabetes by destroying the beta cells in your pancreas... and in small amounts it is in ANYTHING that has white flour in it.. Our society EATS A TON of things with WHITE FLOUR in them- you do the math- a little can add up to A LOT. And if you haven't noticed the incidence of diabetes is sky rocketing- in YOUNG and OLD.

*Type 2 diabetes has always been an adult disease- because most the time it is dramatically influenced by diet and lack of exercise. In children it used it used to be 96 percent were Type 1 and only 4 % type 2, now in some places only 65 percent are Type 1 and a whopping 35% type 2 care.diabetesjournals.org/content/23/3/381.full.pdf

The important point to take away is, beware of any processed food because chemicals are always used. And we simply don’t know what the long-term effects will be of ingesting chemicals, on top of chemicals, on top of more chemicals. Strive to stick to whole unprocessed foods that are as close to their natural state as possible

SomeDAY.....

Some day I will attend one of these!!! They are coming to Utah in the summer- EDEN actually! I am afraid this is not the year for me- hopefully next- I think I would like mine on the beach though...Or I don't know.. the farm house is pretty amazing as well- maybe both! :)

Since 1999 we have set the long table at farms or gardens, on mountain tops or in sea caves, on islands or at ranches. Sounds delightful doesn't it! The one in eden is held at SandHill farms- a garlic farm! I had no idea they were there! I may have to venture up! :)

Why Potassium Iodine?


Due to the recent tragedy in Japan we have seen people searching for iodine tablets everyhwere- iodine is essential for proper thyroid function- here is a little more info...

The Centers for Disease Control explains on their website that after a radiological or nuclear event, radioactive iodine can drift in the air and, if inhaled, can damage people’s thyroids. When people take potassium iodine, they can fill their thyroids full of iodine and thus prevent their thyroids from absorbing the radioactive iodine ( which will destroy the thyroid).

Many people here in Utah have been worried about the radiation plume and the quality of our air.

Donna Spangler, public information officer for the Utah Department of Environmental Quality, UDEQ website, which assures residents there is “no need to take potassium iodide tablets.”

At this point the levels of radiation prospected to be in the plume that would actually fall on estimated California, Oregon, Washington, British Columbia, Alaska, etc. is very minimal and is not to pose a serious risk to health. However, "if" the situation in Japan worsens (ie. the Fukushima reactors have a rod "meltdown" - creating a massive release of radiation into the atmosphere) make sure you and tour family are prepared.. here are a few suggestions I received from the herbal legacy newsletter-

1) Take the time to reevaluate your emergency plan and supplies as a family. Make sure your vehicles are not empty of fuel in case you need to evacuate and do not count on phones working in case of actual emergency.

2) If suggestion is and you plan to, stay put and to stay within your home for an allotment of time make sure you have plastic and duct tape to seal your windows and doors as well as the supplies needed in the case of a usual emergency: water, food, etc.

3) If you plan to evacuate, have at least a 72-hour kit ready to go at a moment's notice. This is good to have no matter what your plans are.

4) Staring now, increase your intake of naturally sourced iodine-containing foods and superfoods: (*estimated amounts of naturally occurring iodine)

  • Icelandic Kelp - *8000ppm
  • Kelp, Dulse, etc. (Seaweeds) - *5400ppm
  • Chlorella - *100ppm
  • Spirulina - *70ppm
  • Pistacios - *51ppm
  • Dark Greens in all there variety
  • Colorful vegetables & fresh fruits
  • Onions & Garlic
  • Iodine tablets
  • 5) The purpose of increasing your intake of iodine-containing foods is to raise the amount of stable iodine in the blood. This will increase the likelihood that the thyroid will absorb the stable iodine instead of the radioactive iodine (iodine-129 and iodine-131) released during a nuclear accident.

    I was curious if Utah had any nuclear reactors and it turns out we have ONE- ( at the Uof U) check out this Article for more info..

    My thoughts and prayers going out to the people in Japan and all those working to control this devastating disaster.

    Free Class!


    How to get MORE veggies in your Diet!
    Hi guys! I am doing a FREE class- How to get more veggies in your diet. A quick one hour class with recipes and handouts- of course :) We will go over how to add more veggies to your diet and how to sneak them in- sauces, dips, smoothies etc.. We can ALWAYS add more veggies to our diets and I know that can be hard to do!
    I have had a ton of people also wanting to know more about juice plus so I thought this would be a great way for people to learn more about it too- taste it , see the research etc.. It really can help bridge the gap between what you do eat and what you should eat! If you already have juice plus or don't care about juice plus :) come and get great recipes and tips and try some samples-
    it will be a fun night and is for everyone!

    *Juice plus is juiced raw veggies and fruits that is dehydrated at a very low temp then put in a capsule or made into a vegan chewable- no sugars or starch are left- only phytonutrients, minerals, vits etc... I have been looking for something like this for ever and I am so excited to share about it! It's great- I have been very impressed and the research that backs it is awesome- it really speaks for itself.

    Holistic Living Conference

    I am so excited to speaking at the LDS Holistic Conference this year!! I am excited to just go too! I hope I can squeeze in some classes- there are lots I want to go to!

    Here are the classes I am teaching:

    Get excited about cooking healthy and tasty meals! Learn how to incorporate healthier foods into your diet and actually want to eat them! I will share 10 things you CAN start doing right now and the knowledge behind WHY you want to start doing these things. The are easy and doable changes for anyone!! There will be some blending/grinding demonstrations. You will leave loaded with tons of tips and I will email you some handouts and recipes to help with your change!

    At the end of this session the participant will be able to:

    • Know the importance of whole foods in your diet and the benefits from them
    • Know how to make better choice with what you have
    • Know how preparation and goal making assist in changes you want to make
    • Know how to get the most out of your smoothies
    • Know how to and what to sneak into your diet and why
    This class is everything and anything you wanted to know about Grains and psuedocereals... What? Many of these are actually pseudocereals which means they are not a true grain which means they are HEALTHIER.

    We will get into wheat, spelt, quinoa, buckwheat , millet, amaranth, oats, rice and barley- and some seeds- flax, chia, sesame etc. For those wanting to learn more about healthy grains this is a great class for you AND for those intolerant of gluten this is a great way to learn about all the other yummy things you can have!!! I will teach you everything I can about them!! Nutritional content and how to prepare and grind them. Also I will show you how to SPROUT them and how to grow your own Wheat Grass! Wheat grass is wonderfully healthy to drink or for cuts- YES cuts!! Wheat grass has lots of uses and is a GREAT addition to any food storage. You want to know how to use this!!!

    I think you may be a little surprised what you can do with all of these and how yummy they can be!! I will also email you lots of handouts and a great little cookbook of some favorite dishes with all kinds of grains.

    At the end of this session the participant will be able to:

    • Explain why white flour is not a healthy choice
    • Know a variety of grains, their nutritional content and ways to prepare them
    • Know how to sprout grains and incorporate them into a diet and great nutrition they offer
    • Know how to grow wheat grass and use it in a diet

    Registration will begin March 1, 2011.

    The discounted early bird registration price is $47 per person and is available until June 2, 2011. After that date, the conference is offered to you at the full price of $60 with the registration deadline being June 20, 2011.

    You will be able to choose 5 of the 54 classes being offered to fill your session time slots. Each session runs 90 minutes, with a 30 minute break between classes, starting at 8:30 am, 10:30 am, 12:30 pm, 2:30 pm, and 4:30 pm.

    Class sizes are limited to between 20-60 students, depending on the classroom size and based on previous years numbers, are expected to fill fast.
